This recipe is in the Soul Meals Love Cookbook (affil link) by Alice Randall plus Caroline Randal Williams. They are the mother-daughter duo reclaiming and defining “soul food by mining the particular traditions of four generations associated with black women and creating 80 healthful recipes to help everyone live lengthier and stronger. Together they overhauled the way they cook and eat, translation recipes and traditions handed down simply by generations of black women in to easy, affordable, and healthful — yet still indulgent — dishes, for example Peanut Chicken Stew, Red Veggie and Brown Rice Creole Greens, Fiery Green Beans, and Sinless Sweet Potato Pie. ”

I made them and also enjoyed them, the lighter dill sauce was also delicious! The writers say, “Canned salmon formed right into a patty and fried was supper and sometimes breakfast in many industrious black households in the middle of the 20th century. Back in the day, salmon generally meant rich bindings and injectables like egg, flour, cracker breadcrumbs, and bechamel sauce to hold all of them together. They were typically fried within an inch of bacon grease. ”

This gluten-free salmon croquette recipe binds the patties along with egg only. Since there are no breadcrumbs, the croquettes will be delicate, therefore handle them delicately. If you would like your croquettes to be a little harder, you can add ¾ cup of breadcrumbs to the salmon mixture.

Seared in a little olive oil rather than being deep-fried, they are also good for you!. Fish is full of protein and omega-3 fatty acids, which help reduce the risk associated with heart disease. Plus, you get even more proteins from the Greek yogurt in the dill sauce that’s served with these croquettes.
