If a healthy smoothie could taste like summer, this could be it! This dairy-free, gluten-free, vegan smoothie is simply delicious, made with ready mango, plums, apricots and peaches or nectarines.
Summer season (and late Spring) is my favorite season when it comes to eating seasonal fruits and vegetables. I am talking about, what can be better than biting right into a juicy nectarine or plum?
I had a super ready sugar mango sitting on our counter ready to eat and made a decision to use it in my morning smoothie together with some of the other fruit sitting inside my fruit basket; plums, nectarines plus apricots (peaches would work too). Instead of using milk, I wanted to keep it dairy-free so I used Bai5 Molokai Coconut Antioxidant Infusion instead (I’m obsessed with these things! ). If you’re a fan of coconut with this problem, but don’t care for the taste associated with coconut water, this is a great choice and even tastes great straight from the particular bottle. This recipe makes two huge smoothies, if you want to add a protein increase you could throw in some hemp seed products or chia as well.
Summer Mango Rock Fruit Smoothie
If a smoothie could flavor like summer, this would be it! This particular dairy-free, gluten-free, vegan smoothie is actually delicious, made with ripe mango, apples, apricots and peaches or nectarines.
- 1 mug Bai5 Molokai Coconut Antioxidant Infusion
- 1 ripe manga , peeled and diced
- one ripe plum , pitted and cut
- 1 ripe peach or even nectarine , pitted and chopped
- 1 ripe apricot , pitted plus chopped
- a little fresh grated lime zest
- 1/2 glass ice cubes
- mint leaves designed for garnish , optional
Combine all of the ingredients in to the blender except for the ice plus blend on high for thirty seconds until well combined.
Add the ice cubes plus blend on high for ten to 20 seconds more, till chilled and crushed.
Divide between two glasses plus garnish with mint. (optional)
