My husband and I aren’t fans of raw carrots, yet add lemon juice and Dijon and it’ s a game player – we LOVE them!!
An easy 5-ingredient carrot salad that is lemony, shiny and delicious! You don’ capital t need a spiralizer to make it, you can use pre-shredded carrots or use a potato peeler to cut the carrots into laces and ribbons.
If you do happen to find really thick carrots, they are ideal for spiralizing (they should be at least one -1/2 inches in diameter). You are able to usually find thick carrots on the farmers market or sold reduce in the grocery store. And for those of you who else often ask what spiralizer I personally use, pictured below is the Inspiralizer , the best quality spiralizer in order to easily spiralize those tougher veggies like carrots and butternut.
A perfect side dish meant for chicken, grilled steaks or even seafood. If you want to turn this into a major dish for lunch, I think it could be great with grilled chicken plus crumbled feta added.
