You can tell by the ability of tomato recipes here recently, I’m in the thick of it. Now is no exception. I made this particular for dinner last night, and if you have a package of spaghetti and some good tomato vegetables you’re half way there. Whatever you see is a tangle of spaghetti, olives, nuts, vegetables, and ripped mozzarella in a no-cook, lemon-zested tomato sauce. It’s bright, summery, multi-colored food, easy to adapt based on whatever you have on hand. The key? Make it with an extra hot night when tomato season is at its maximum. Plus don’t even mess around if your tomato vegetables aren’t on point.
This can be a quintessential pantry meal. I additional olives, pine nuts, and a little bit of cheese to the base ingredients associated with spaghetti and tomatoes, but you can test out endless other directions. I love the particular pine nut component here, yet toasted almonds, walnuts, hazelnuts, or even cashew would all be excellent. You could do a spicy version with the addition of a dollop of harissa towards the sauce, or some chile flakes, or a tablespoon of toasted sesame chile oil. On the vegetable front side, you see string beans pictured (because that’ s whats coming out of the garden right now), but kit on anything from broccoli plus cauliflower florets, or asparagus – basically, any quick cooking vegies that you can throw in the pasta drinking water at the last minute.
Use your favorite spaghetti noodle here. I love a traditional spaghetti noodle, don’ t get me wrong, yet one of the big surprises to me in the last few years is how good some of the wholegrain and pulse-based pastas are. There exists a wide range of brands around, so you’ ll need to experiment. My suggestions about this front is to “ time around” until you find a few manufacturers and shapes you like. For daily pasta eating when you compare nutritional labeling, the noodles made with more entire ingredients can deliver significantly more nutritional vitamins, minerals, fiber, protein and the like. Therefore it’ s worth it to play about.
