Welcome to another episode of Unique Things Beth Makes with Left over spots in Her Fridge! This week it’ s a super Quick Fix Broccoli Pesto Pizza that totally surpassed the expectations. I’ m definitely going to become making this one again, and often. As with all my “ throw together meals” this one has some universal applications, therefore even if you don’ t have the very same leftovers as me, I hope this particular pizza inspires you!
To make this Broccoli Pesto French fries as fast and easy as possible, I utilized a tortillas as the pizza brown crust area. Tortillas make the greatest thin and crispy pizza crusts and are pretty much easy. If you haven’ t used the tortilla as a pizza crust however, you’ re totally missing out.
I used some pesto that I had in my pantry because my pizza sauce. The essential oil kind of soaked into the tortilla plus gave it an almost fry bread-like texture, which was unexpected but completely awesome. A little chopped frozen broccoli continued top, along with some mozzarella, a mild sprinkle of feta for a salty kick, and a pinch of crimson pepper flakes for fire. The particular combo is so unexpectedly delicious plus I’ m IN LOVE.
Yes, but the brokkoli will not cook through in the 5-6 minutes that the pizza is in the particular oven, so you’ ll convey more of a raw broccoli topping. You can also par-cook your broccoli before beginning. Frosty broccoli is great because it’ h par-boiled before freezing, so it currently tender once thawed.
If you want to add to the broccoli and pesto, here are a few ideas that I think will be amazing, if you happen to have them on hand: roasting red peppers, sun dried tomato vegetables, goat cheese, or bacon. Not all of them because that would be a little overpowering, but adding one or two would be great.
And if you don’ t like broccoli or pesto, feel free to use whatever toppings you want on pizza! I’ m proven to hit up the salad bar on the grocery store for a pinch of this or even that to top my pizza, without having to buy a LOT of each product (see Fast solution Salad Bar Pizza ).
