This Mediterranean style veggie salad was inspired by certainly one of my all-time favorite salads, tabbouleh , but it uses white-colored beans instead of bulgar . It has all that tangy lemon-garlic taste that I love about tabbouleh, yet without needing to spend time cooking and chilling bulgur.
I actually used large butter beans with this recipe, but if you don’ capital t have butter beans available test cannellini beans or chickpeas. I might avoid softer beans that often mash easily, like navy coffee beans or great northern beans. Cannellini beans and chickpeas are big enough and firm enough to keep up to the stirring of this salad.
The flavors in this white veggie salad (lemon and garlic) are extremely versatile that it makes a great aspect dish for a wide variety of mains.
