Healthy lemon blueberry bread is usually moist, fluffy, and packed with taste. This lightened-up lemon bread does not contain SUGAR, NO BUTTER, and can be produced with whole wheat, gluten-free flour, or even all-purpose flour.

A few years back I shared my healthy banana bread recipe and so many of you might have requested a healthy blueberry bread edition. This is my favorite semi-healthy lemon loaf recipe and I can’t wait to talk about it with you. This lightened-up orange blueberry bread is everything you desire in a lemon bread and much more.

It’s produced healthy by replacing sugar along with honey, butter with coconut essential oil, and by using white whole wheat flour. You can also use a mixture of oat flour or white flour if you would like. The end result is a light plus fluffy naturally sweetened bread which makes a delicious breakfast or a few hours snack. The addition of blueberries is completely optionally available but I highly recommend them in case you enjoy blueberries.

To keep the particular blueberries from sinking to the bottom part of the pan while baking and stop them from browning, coat these a teaspoon of flour.

How to Store or even Freeze

  • TO STORE : Store the breads at room temperature for three or more days or in the refrigerator for about 1 week.
  • IN ORDER TO FREEZE : Freeze the breads as a whole loaf or cut straight into slices and place in freezer-friendly hand bags for up to 2 months. Allow thawing overnight in the refrigerator or micro wave for a few seconds to bring it back in order to room temperature.

Ingredients

  • 1 ¾ whole wheat flour + 1 teaspoon to coat the particular berries
  • 1/2 teaspoon cooking powder
  • ½ teaspoon cooking soda
  • ¼ teaspoon sodium
  • 1 cup plain Ancient greek yogurt at room temperatures
  • ½ cup maple viscous, thick treacle
  • cup coconut essential oil melted
  • two eggs at room heat
  • 1 tablespoon fresh orange juice
  • 1 tablespoon ” lemon ” zest
  • 1 teaspoon vanilla extract
  • 1 glass fresh blueberries

Instructions

  • Preheat oven to 350F. Oil and flour a loaf skillet and set aside.

  • In a medium bowl mix the dry ingredients together; flour, baking powder, baking soda, plus salt.

  • In a large bowl combine the particular wet ingredients; whisk the Ancient greek yogurt, maple syrup, coconut essential oil, eggs, lemon juice and zeal, and vanilla.

  • Gently fold in the dry elements to the wet ingredients.

  • In a small bowl with a teaspoon associated with flour coat the blueberries plus toss it. Fold the good into the batter.

Notes

To create vegan : Use maple syrup rather than honey, replace the eggs along with flax eggs and replace Ancient greek yogurt with 1/2 cup non-dairy milk.  

To help make gluten-free : Make use of gluten-free flour . Do not substitute with coconut flour or almond flour.
