Bento boxes are great whenever you’re craving a snack yet want something healthy that will fill up you up till your next food. This Middle-Eastern meal-prep bento package does just that. It’s loaded with fresh new veggies, hummus, pita and cooked falafel. The chickpeas, hummus, plus falafel are high in fiber and protein which will keep you full plus help you lose weight.
For the falafel, I used my crispy baked falafel formula and for the hummus, I simply blended chickpeas, tahini spices, lemon and seasoning in meals processor. You can use store-bought hummus too if you prefer.
For your bread, I used whole wheat pita. To make crunchy pita chips for your hummus, roast the pita within the oven with a drizzle of essential olive oil, salt, pepper, and paprika.

For the hummus: Blend garbanzo beans, tahini sauce (or yogurt) lemon fruit juice, olive oil, garlic, cumin, salt, in the food processor. Divide hummus directly into small 4oz containers if offered (can also use snack dimension zip-lock bags).
To Assemble: Divide cucumber, grape tomatoes, chickpeas, olives, plus feta cheese evenly into every container (mix them or bear them separate). Place 1/4 cup servings hummus in each container. Reduce pita into 8 slices make 2 slices in each box. Add 1-2 falafel into every container. Cover and refrigerate as much as 4 days. Enjoy cold or even at room temperature!
