A dietitian friend of my own shared this clean and comforting vegetable soup recipe with me last year. When you have been over-indulging or stress consuming during quarantine, this soup will be the perfect way to help you get back on course!
Cashew cream (cashews pureed with water) is combined with immune-boosting broccoli, lentils, cashews, onions, carrots, celery and spinach. This results in the healthiest and many delicious and creamy soup actually! It’s also vegan and gluten-free.
Drizzle a dish with a bit of olive oil and assist with a big green salad or perhaps a piece of whole grain bread. Trust me, you really feel so nourished and wholesome, you will be inspired to make other good-for-you lifestyle changes too!
This particular dairy-free creamy Detox Vegetable Soups is not only easy to make, it’s furthermore LOADED with nutrient-rich goodness!
Place the onion, carrot, celery plus broccoli in a large pot. Include 6 cups water, basil plus salt to the pot and mix. Bring to a boil over high heat after that cover and reduce heat to a lower simmer.
Let simmer for 15 to 20 moments or until broccoli is soft.
Meanwhile, in a food blender, create your cashew cream. Mix together the cashews and left over 1 cup water. (If you adapt the serving size, just keep the cashew to water ratio 1: one )
Put the cashew cream into the container with the veggies and stir.
Include the green lentils and mix again.
Include the spinach to the blender, plus carefully (let the pot of vegetables cool a bit first! ) mix the soup in batches till smooth.
Ladle straight into bowls, drizzle lightly with essential olive oil and top with freshly terrain pepper, if desired. Enjoy!
To store: Refrigerate in an airtight container for up to four days.
