The lovely, delicious, fall or winter greens is made with mixed baby greens, pomegranate, Gorgonzola and pecans with a pomegranate vinaigrette.
Salad along with Pomegranates and Pecans
I love adding pomegranates to my green salads, they are juicy with a minor pop when you bite into all of them! I usually bring this salad in order to potlucks or parties because it is so colorful and easy to create, and I always get compliments! An easy yet elegant fall or wintertime salad, perfect to serve as an initial course for the holidays, or an easy side dish or lunch.
This was one of the first recipes I actually posted back in 2008 (wow that is over 10 years ago! ) while i started blogging and didn’t have a good camera. It’s so hard to get those older recipes now due to the fact I have been rephotographing them as the many years passed, with better photos plus instructions. I always change the date to create the post to the top so that you can all see them, as I have got thousands of tested recipes here now!
Want to make this for lunch? You may make the dressing ahead, it will remain fine refrigerated in an air limited container for 2 weeks. Simple halve the salad ingredients and individual in 4 meal prep storage containers. If you wish you can add grilled chicken or even fish on the side for more protein.
- Blue cheese or goat mozzarella cheese can be used in place of gorgonzola
- You can swap the pecans pertaining to candied pecans to really take this greens over the top!

Mixed Baby Vegetables with Pomegranate, Gorgonzola and Pecans
The beautiful, delicious fall or even winter salad is made with mixed child greens, pomegranate, gorgonzola and pecans with a pomegranate vinaigrette.
- 5 cups Blended Baby Greens
- 5 mugs bunch Baby Arugula
- one cup pomegranate seeds , from one POM Wonderful Fresh pomegranate
- 2 oz pecans , chopped (about 28 halves)
- 1/2 mug Gorgonzola cheese , crumbled (4 oz)
- five tbsp pomegranate juice , I use POM Wonderful
- 3 tbsp champagne vinegar
- 1 tbsp shallot , finely minced
- one tbsp honey
- 5 tbsp extra virgin olive oil
- sodium and fresh pepper
For the vinaigrette, combine pomegranate juice, olive oil, white vinegar, honey, salt and pepper in a glass jar and shake strenuously.
Toss mixed produce in a salad bowl and best with pecans, gorgonzola and pomegranate seeds.
Drizzle along with vinaigrette right before serving.
