Lovely, juicy watermelons are one of the best reasons for summer. I love eating watermelon on its own, but it also makes an excellent base for the fruity drink. This Boozy Watermelon Lime green Granita is part cocktail plus part dessert – such a relaxing way to cool off during the hot summer time. Made with just four ingredients – watermelon, lime, rum, and glucose – this watermelon ice treat is like a grown-up slushie. A granita is an Italian language dessert, originally from Sicily, just like a slushie. Granitas are made of glucose, liquid and flavored with fresh fruit. They can be eaten with a spoon or even drunk through a straw. Granitas possess a coarser, icier texture than sorbet.
Granitas do not have to include alcohol. To make this watermelon granita recipe, start by putting the melon, lime juice, rum, and sugar in the blender and process until simple. Pour the puree into a 9” x 9” metal baking skillet and freeze for about 1/2 hours.
Use a shell to scrape the mixture about. Put the pan back in the freezer plus freeze until almost set to get 1 to 2 hours. Scrape the granita again with a fork to form large snow-like ice crystals. Freeze plus repeat scraping every hour roughly until the entire mixture is freezing and shaved. Serve in martini glasses and garnish with melon wedges and mint.

Serve in martini glasses and garnish with melon wedges and mint.
